The Bellota 100% Ibérico Pata Negra shoulder COVAP alta expresión has been elaborated in the area of Los Pedroches (Córdoba). It has an intense flavor with an unctuous texture, thanks to its alimentation based on completely natural pastures and acorns, and to the fact that it is raised in freedom. The salt used in its elaboration is from the vicinity (it comes from the Parque Natural de Odiel, in the marsh of Huelva) and the curing process follows the ancestral tradition of the ham masters in the area.
